Like many mothers, I always try to please my son when he is craving something special for dinner. A few days ago he told me that he wanted to have pasta for dinner, and just this week I teamed up with Barilla® to try some of its recipes inspired by our Latin flavors. Barilla®recipe website has recipes surprisingly fast and simple but very tasty.
Spaghetti with Chipotle Ground Beef and Cotija

And this is a great advantage for modern mothers who have a busy life with their daily workload and children activities. This is not a traditional Mexican recipe, but that does not mean that Mexicans do not like to eat pasta. On the contrary, pasta arrived in Mexico during colonial times and is now very common on restaurant menus and at home dinner tables, usually to accompany a good Milanese (a combination that kids love).
This recipe for Barilla®Spaghetti with Ground Beef, Chipotle Chili, and Cotija Cheese has been a hit in our home; we all love it, including my son. I love being a mom!
How to make spaghetti with chipotle ground beef
DIRECTIONS:
- Bring a large pot of water to a boil, meanwhile sauté beef in olive oil for 4-5 minutes or until browned and crumbled. (Please check the ingredients list below)
- Add the chipotle and poblano sauté for 1 minute, add the crushed tomatoes, 1 cup of water and season with salt and pepper; simmer for 3-4 minutes.
- While the meat sauce is simmering. Cook the pasta according to the package directions, drain and toss with the hot sauce, top with the cheese and chopped green onions before serving.

Spaghetti with chipotle ground beef
Ingredients
- 1 Pkg. Barilla®Spaghetti
- 1 Tbsp. Extra virgin olive oil
- 1 Lb. Ground Beef
- 4 Chipotle peppers canned
- 1 Can 28oz Crushed Tomatoes
- Salt and pepper to taste
- ½ Cup diced Poblano (optional)*
- ½ Cup cotija cheese
Instructions

Notes
- I substituted the Poblano pepper for ½ cup of chopped green onion. It works really good with the chipotle pepper.
- I like to use ground beef with some fat content, you can remove the excess fat after cooking it for first 5 minutes.
- Barilla®pasta products, canned tomatoes, and chipotle peppers are all available at your local Walmart store.

Should I roast the pepper for this recipe?

Hello Kim,
The chipotle pepper on this recipe is the type you buy in adobo in a can o jar. Not need to roast it.
