With summer right around the corner, I always plan to make this special Mexican dessert at least a few times because of how refreshing and delightful it is. To make this delicious recipe for Carlota, here is the list of ingredients you will need to make this dessert.
- Evaporated milk
- Sweetened Condensed milk
- Freshly-Squeezed Lime juice
- Cream cheese
- Galletas Marías (Maria brand cookies)
- Extra galletas Marias for decoration
- Lime slices or lime zest for decoration

How To Make Carlota de Limón: Step By Step Tutorial
To make things easier for you, I am going to break down the directions for this recipe into sections.
The process is the same for any type of dish you use; however, the number of layers will depend on the size of the dish and the quantities involve.
Make The Creamy Lemon Base:
- First, squeeze the fresh limes with the help of a hand lime squeezer or citrus juicer.
- Place the evaporated milk, condensed milk, and lime juice in your blender. Blend the mixture lightly for a moment to ensure it is fully incorporated.
- Stir with a spatula, and then add the cream cheese in pieces. Process everything in your blender for a few seconds until it has a smooth and thick texture that coats the back of a spoon. Set to the side.
Tip: If you don't have a blender, add your ingredients to a mixing bowl and blend the lime mixture with an electric hand mixer.
Start Building The Carlota:
- As soon as the creamy base is made and ready to go, start arranging the dessert glasses, an 8-inch square pan, or a 9-inch springform pan).
- First, add a few tablespoons of the lime mixture to the bottom of the baking dish, then a layer of galletas Marias. You may have to cut some cookies in half to fill the container.
- Now, add a couple of tablespoons of the creamy lime mix, covering the cookies. Use a small spatula or a spoon to even out the mix.
- Then you are going to repeat the whole process, again! Add another layer of cookies and then the creamy mix until you have a few layers of cookies and the creamy lime base. The amount of layers will depend on the dish you decide to use.
Note: Leave some leftover galletas Marias, which will be used for decoration when it is time to serve.
Set and Serve!
- After you have finished preparing the carlotas de limón, place the baking dish or container on a tray and cover it with plastic wrap.
- Place in your fridge for about 3 hours before serving.
- To serve, crush some of the leftover cookies and slices of fresh limes.
