Like pretty much every other kid in the world, I used to love recess in school growing up, especially that one year in second grade, when some of my cousins went to the same school as I. We would get together during recess to play and have a snack for merienda. Merienda is a light meal for lunch and dinner, and it is a custom in many cultures. It usually consists of a glass of milk, juice, or coffee and a piece of bread, pastries, or cookies.

Easy snack idea Crackers and cheese | Mexican Recipes

At school, some kids brought a snack from home, but others enjoyed the offerings sold at the school’s little co-op. In the case of my cousin and I, that meant some salty golden crackers topped with some bottled salsa. Yep, I was already eating salsa in second grade! All throughout my grade school and college days, and up until now, crackers (with or without salsa) are my favorite mid-afternoon snack with my coffee for merienda time.

That’s why I got excited right away when I saw the opportunity to share with you this recipe from Nabisco: Ritz AvocadoQueso Toppers. This is one of many fun and delicious Latino-inspired recipes found on Nabisco’s Pinterest board, just in time for Día del Niño. These recipes are easy to make and feature the family’s Nabisco favorites: Oreo, Chips Ahoy!, Ritz (my favorite), and Honey Maid. I’m very happy I found this refreshing recipe, as it’s a new “Nabisco” spin on my traditional crackers with salsa snack, and perfect for the Spring season!

I’m glad to see that with these new recipes, Nabisco is going to help Latina moms share the tradition that they grew up with, the merienda.

Ingredients
  

  • ½ avocado cut into 12 slices lengthwise, then in half crosswise
  • 1 tsp. fresh lime juice
  • 24 RITZ Garlic Butter Crackers
  • 5 oz. queso fresco cut into 24 slices
  • 8 grape tomatoes each cut lengthwise into 3 slices

Instructions
 

  • Toss avocado slices with lime juice.
  • Top crackers with cheese, avocados, and tomatoes.
