For some time now, I’ve been wanting to write about the many home remedies we make at home using Honey, and my favorite Honeycomb, made in USA Honey.  Moms and Grandmas in Latin America believe in the benefits of this sweet nectar, and never forget to use it when taking care of their loved ones. These are traditions that many generations of Mexicans believe in, and some of them have been passed down to me by my mother and mother-in-law.

Chamomile, Anise, and Mint are used in Mexico to make teas that are usually sweetened with honey. These hot infusions of herbs and spices are prepared to treat some minor ailments, such as stomach aches and the common cold.

Today, I am sharing two recipes with you: one is well known in Mexico as a remedy for a sore throat, and the other is a special recipe handed down to me by my mother-in-law. It is a recipe for a Nutella-like nut spread that gives you energy and makes the perfect afternoon snack for when your kids come back from school. This spread could be a great gift, Honey for the Holidays!

Healthy Honey Recipes | Ingredients

Cinnamon, Honey & Lime Juice Tea

DIRECTIONS:

  • Place the water in a small saucepan and turn heat to medium-high, when it starts boiling add the piece of cinnamon stick and lower heat and simmer for about 7-8 minutes. (Please check the ingredients list below)
  • Remove saucepan from heat. Add honey and the lime juice, stir well.
  • Serve in two cups, and add the Honey Comb. Drink your tea and chew the honeycomb.

In case you are wondering where to get Honey with the honeycomb. I found the brand  “Don Victor Honey” sold at my local Walmart  in the Hispanic Section. I also liked the gorgeous jar!

Homemade Creamy Honey Nut Spread

DIRECTIONS:

  • Grind the nuts using a spice grinder, food processor or heavy-duty blender until they are completely grounded. (Please check the ingredients list below)
  • Mix already grinded nuts, margarine and honey in a saucepan at lower heat. This step will take about 2 to 3 minutes. Just enough time to melt the butter and then mix thoroughly. even though the saucepan was over low heat the mix will be very hot, I know you will be tempted to stick your tongue on the spoon, but wait a few minutes for it to cool off and check for sweetness in case you want to add more honey to your own liking.

  • Pour the nut mix into a container with a lid and let cool. Store it in your fridge and serve over crackers, toast or fruit slices.

Other uses we have for honey during breakfast time, is drizzling a little over grapefruit or a cup of plain yogurt.

Ingredients
  

Cinnamon, Honey & Lime Juice Tea

    For 2 Cups

    • 2 cup of water
    • ½ stick of cinnamon
    • 1 Tablespoon Honey
    • 1 Tablespoon Lime or Lemon Juice
    • 2 small pieces of Honeycomb Made in the USA Honey (About ½-IN Cube)

      Makes about 1 ¼ Cup Spread

      • 8 Ounces of Roasted Hazelnuts Almonds or the nuts of your choice
      • 4 ounces margarine no salt added
      • 4 Tablespoons of Honey

      Notes

      Cinnamon
      • When I was growing up, one of my uncles used to give us kids a small amount of Honey Comb fresh out of the beehive, while tendering the bees hives, it was a sweet juicy treat back then. Do you know that you can add the Honey Comb to savory and sweet dishes? I personally like to chew a little piece when having a sore throat, while drinking my tea, it really helps ease the pain.
      Honey Nut Spread
      • This recipe is from my Mother-in-law and her recipe uses Hazelnuts, but I had used the recipe with other roasted nuts, like this time that I used almonds. You can also add other flavorings like vanilla or cinnamon. Better yet, substitute the Honey for the whipped honey mixed with cinnamon, Chocolate or caramel from the Don Victor Brand. It is by far a better option than buying the most popular brand of Hazelnut spread since you are making it at home at a much lower price.
