25 Healthy Mexican Recipes
With all the bad reputation that Mexican Food has, people, think that it is just tortilla chips and fried tacos, some might think that Mexican food is not healthy at all. Well, I have news for you, traditional everyday Mexican food is healthy food, just take a little look at the recipe section on this blog, and you will agree on that. And
since it is a new year, and maybe some of you want to start fresh with a lighter fare of meals, I selected a few of my favorite healthier dishes to share with you. As you can see in this collection of recipes, you can have stews, soups, and other meals without making too much sacrifice and enjoy Mexican food, from breakfast to dinner. I believe that everything is about moderation, eating the right amount of proteins, vegetables, and carbs. Add lost of vegetables to your dish, either steamed, sautéed or raw. Enjoy!
Vegetable Garden Soup
(Substitute with seasonal vegetables)
Grilled Cactus with melted cheese
Top with a raw salsa, serve with corn tortillas, and you have a whole meal.

This is my favorite comfort food, use baked tostadas, and lots lettuce.
Carne Asada - Grilled Meat
Use cuts of meat with less fat, and add a great salad with tomatoes.

Use chicken breast, seasoned with salt, peppers, powder onion, and garlic.
Mexican Style corn and zucchini.
Try these dish in tacos using warm corn tortillas.
Pork with Zucchini and Corn Stew
A favorite of many, use lean pork meat.
Stuffed Zucchini
Two servings of vegetables per person.
Enfrijoladas, tortillas dipped in bean sauce
Serve with a salad or steamed vegetables and dinner is ready.
