Thank you so much for writing your blog in English. Authentic recipes for Mexican food are not common. I came searching info on making masa. I bought white pozole corn last year in Puerto Vallarta and am soaking and cooking it now with hydrated lime. The corn hulls seem a bit hesitant to loosen but I will persevere.
I get asked all the time how I learned to make tamales, tinga, pozole and tres leche and my answer is Mexico in my kitchen.
It's step by step easy to follow recipes that taste amazing.
It's a blog that teaches me more about México the culture and the amazing food!
I will be forever grateful for the things I learned from Mely's kitchen.
Now if only my learning Spanish would be as easy as learning to cook.

I have used several of your recipes, and it reminds me of the food that we were served in Matamoros 40 years ago! I look at other sites that are claiming to have authentic Mexican food, and I remember the food, and people that we were fortunate to meet when we lived there, and have traveled back for the last forty years. Their food is Tex-Mex, yours is authentic. Love your blog, and if you ever decide to do a cooking school, let me know, and my daughters and daughters-in-law will be signing up.

I am a decent cook but not well-versed in Mexican style cooking. I found your blog, and I am working my way through the recipes. We had steak tacos Monday. Beef short ribs are simmering for tonight (with tomatillos sauce) and I'm marinating chicken thighs for roasting tomorrow.
Your recipes are easy to follow and have the authentic flavors my husband loves. It's also nice that I can find all the recipes I need in one place.

Mely, I am grateful for being able to find good, Mexican recipes. My mother was a great cook; however, before her death, I never wrote down her recipes.
The only recipe that I have actually written down is her tamales. I have been trying to recreate the recipes that we so enjoyed. I consider myself a pretty good cook; however, my mother was a wonderful cook and I miss her so very much.
A few months ago, I made your beef ribs with tomatillo sauce. At the time, I could not find hojas de aguacate. My husband and I loved it.
When I made the recipe, for the second time, I made it with pork. By then, I was able to find the hojas de aguacate. I actually put them in a cheesecloth bag so that they would not break up. It worked well. I think I liked the recipe better with pork.

I live in South Texas- close to Corpus Christi. We have lived in South Texas all my life. I know great Mexican food.
Whenever we visit other areas, we never can find good Mexican food; only Tex-Mex.

My husband is from San Pedro Coahuila Mexico and has also lived in Nuevo Laredo Mexico and loves his homeland’s food, as do I. I found you your web page in search of Menudo recipes many years ago. Menudo is his favorite dish and he loves your recipe which has now become mine. He will say it is a very close second to his mother. Secretly, I believe he likes it more but he will never admit to it and I am ok with it because I love her.
Your web page has been my “Go-To” for authentic food. He has now requested Aguachile con Camaron but I could not find it on your page. Is there any chance you could add it?

I haven’t been using the recipes for long but everything I have tried my husband and I have loved. He is from Guerrero Mexico and it gives him a little reminder of home. The food is very different than the “Tex-Mex” food I grew up eating! Even the beans are different. I will post a picture when I cook the next recipe.

My name is Linda, and I live in Canada with my husband and 9-month-old baby. My husband is obsessed with tacos. Everywhere we travel, he finds a new favorite taco place. A few months ago, a good Mexican restaurant finally opened up nearby, walking distance from our house. This was great because the food is delicious. But it is also not great because my husband eats there 2-3 times a week, and it's expensive!

Dear Mely, what a wonderful site. My parents have both passed on and I had forgotten some of the traditional recipes that had been passed on by our parents and previous generations. When I saw your site it brought tears to my eyes because the way you cook is very similar to the recipes I remember. I am so grateful that you choose to start this site as I feel that I have been reconnected with my past in a way that I thought had been lost forever.
