  • 1/3 cup chopped white onion
  • 1 Serrano pepper finely diced
  • 1/3 cup chopped cilantro
  • ¾ cup chopped tomato
  • 1 3oz bag of pork cracklings
  • 1 lime
  • Salt and pepper to taste.
  • To serve: warm corn tortillas or tortilla chips

  • In a medium-size bowl, mix onion, Serrano pepper, cilantro, and tomato. Squeeze the lime juice over it, season with salt and pepper and gently stir the mixture.
  • Now, add the pork cracklings to the mixture until well combined. Next step, enjoy!

You can also serve a hot salsa on the side, for those that like to spice things up. I’m one of those, that is why I mention it.
