Ingredients

  • 4 Medium size sweet potatoes
  • 1 tablespoon butter per sweet potato
  • 1 tablespoons honey per sweet potato

Instructions

  • Place the sweet potatoes in a large pot and cover with water. Turn the heat to medium-high.
  • Once the water starts boiling, reduce the heat and place the lid on the pot. Let simmer for 20 minutes; the sweet potatoes will be softened at the end of this time.
  • Remove the sweet potatoes from the pot and place them into a single layer on a baking sheet or sheet pan. Bake in a preheated oven at 350º F for 10 minutes, stirring halfway.
  • Tip: Check for doneness by inserting a toothpick: if it goes all the way through effortlessly, the sweet potatoes are ready.
  • Place the potatoes on a serving dish or on individual plates. Cut a slit lengthwise in each sweet potato. Add the butter and drizzle with honey. Enjoy!

Notes

Note: To take these easy baked potatoes to the next level, mix a few tablespoons of melted butter, 1 teaspoon of cinnamon, 1 tablespoon of honey, and a pinch of salt into a small bowl to make a butter mixture.
